Black soup is a tasty Benin cuisine that is actually quite easy to prepare. You do not have to be from any ethnic group that ‘owns’ the food or soup before you cook it. Sometimes, they are just too delicious to be left for the founders. So we share how you can prepare Black Soup, also called Edo Esan Soup.

Ingredients

Bitter leaves

Palm oil

1 cup of scent Leaf (Efinrin)

Assorted Meat

Stockfish/Smoked Fish, and Crayfish

Scotch Bonnet (Ata Rodo)

Seasoning & Salt

Preparation

Boil and season your meats and stock fish or smoked fish

Whilst the meats are boiling, wash the bitter leaves and squeeze until the bitterness disappears and blend until it is smooth. Repeat the same process with the Scent Leaf.

Blend the Scotch Bonnet (Ata Rodo) and add to the pot of cooked meats and stock fish.

Once the pepper has been absorbed by the meats and stock fish, add a reasonable amount of palm oil.

Give the palm oil time to dissolve. This should take about 3 – 5 minutes. Then add crayfish and seasoning and salt to taste

Add the blended bitter leaf to the pot. Allow to cook for 2 minutes

Add the blended Scent Leaf. and a allow the soup to cook for another 5 minutes and your black soup is ready.
